Julie Shaw, Owner
Julie always loved going for ice cream with her kids, but hated always having to tell the ice cream shop to make the scoop smaller or tell the kids they couldn’t order the neon blue ice cream or birthday cake flavor. She wanted them to have the ice cream experience without having to censor what they chose all the time. So, one night, she and Patrick were out with the kids at a packed ice cream shop she decided they were going to open their own – but one that sold real kid-sized scoops of real food.”

Patrick Shaw, Owner
Patrick’s health-food cred dates back to when he was 13 and his mom opened a health food store—Shaw’s Vitality Shop—out of their Lynnhaven, Florida, living room, selling whole foods, grains, nuts, and trail mix. Patrick has always maintained that it was more of a lifestyle than a business. “We had a huge garden growing up. We were always ‘the kids with the weird lunch.’ “ Eventually Shaw’s grew into six stores across the south, and Patrick was raised believing that whole foods taste better – real foods taste better.

Bob Cherenzia, General Manager
Growing up in Michigan, you wouldn’t expect Bob to be much of a skier, but he’s been skiing since he was four years old – a hobby that precipitated his recent move to Colorado. Working at Red Trolley allows him to share his belief that healthy food can and should be achieved anywhere – even in an ice cream parlor!
